A good roasting process is what gives each variety of green coffee in a blend the right organoleptic profile, enhancing its aroma while balancing acidity and bitterness appropriately.

It is an art that goes hand in hand with science: on the one hand, it is crucial to understand how temperature, roasting time, and ventilation interact with coffee beans to ensure the best production process; on the other, the taste and expertise of the master roaster give each variety a unique flavour.

Unlike industrial roasteries that produce coffee using high-temperature cycles lasting only a few minutes, Caffè Tomeucci has always employed a slow roasting process, following a traditional method that allows for precise control over the roasting of individual beans.

By roasting the same type of green coffee at different temperatures and for varying lengths of time, it is possible to achieve between 700 and 1000 different aroma combinations.

Slow roasting allows the roaster to have better control over the sensory characteristics of the final product.

The production of each blend consists of multiple roasting cycles, controlled using a modern roaster to fine-tune the roasting profile and ensure consistent quality over time.

During each cycle, we roast only one variety of coffee at temperatures ranging between 200°C and 230°C, for a duration of 14 to 20 minutes. Each cycle is personally overseen by a master roaster, who ensures quality control through scientific methods.

The results of the various roasting cycles are then blended according to our time-honoured recipes, crafted over centuries of experience, to create blends that have been refined over time to match our customers’ evolving tastes.

But that’s not all!

To allow the beans to release the oils that give our coffee its delightful taste and aroma in the cup, the roasted coffee undergoes a resting period as part of the degassing process.
