WHAT IS IT AND HOW DOES IT WORK?
The Moka pot is a coffee brewing device invented in Italy in 1933, revolutionising the way coffee is prepared at home. It consists of a lower chamber that holds the water, a filter where the ground coffee is placed, and an upper chamber where the brewed coffee is collected.
HOW DOES THE MOKA POT WORK?
When the water in the lower chamber reaches boiling point, the steam pressure pushes the water upwards through the coffee grounds in the filter, turning it into the rich, flavourful beverage we all know.

HOW TO RECOGNISE A GOOD COFFEE
The first sign of a good coffee is the pleasant aroma released as soon as it starts flowing. Another important factor is the colour: the first liquid should be very dark, and once the pot is removed from the heat, a light hazelnut-coloured foam should appear.
The colour also depends on the blend: a 100% Arabica coffee will have a lighter shade, while a mix of Arabica and Robusta will produce a darker brew.
5 RULES FOR MAKING COFFEE WITH A MOKA POT
1. The Moka pot must be clean and dry, but never washed with detergent or in the dishwasher.
2. The water must always be cold and should not exceed the level of the safety valve inside the lower chamber.
3. The grind for Moka coffee should not be too fine and must not be tamped down in the filter.
4. Place the Moka pot on low heat and remove it as soon as the coffee starts flowing.
5. Before pouring the coffee into a cup, stir it well to mix the denser initial extraction with the lighter part that comes out at the end.
